Cozy Rosemary & Garlic White Bean Soup

A warm and comforting white bean soup with healthy ingredients, great for chilly days.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon fresh rosemary, chopped
  • 1 can (15 oz) white beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 cup carrots, chopped
  • Salt and pepper to taste
  • Fresh rosemary for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the minced garlic and rosemary, cooking for another minute.
  4. Add the carrots, white beans, and vegetable broth.
  5. Bring the mixture to a boil, then reduce heat and let simmer for 20-25 minutes or until the carrots are tender.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh rosemary.

Notes

For extra creaminess, blend a portion of the soup and mix it back in. Feel free to add other vegetables for more nutrition.
