Delightful and airy cranberry mousse cups that balance indulgence with tartness, perfect for any festive occasion.

Ingredients

  • 1 cup fresh or frozen cranberries
  • 1/2 cup sugar
  • 1 cup heavy cream
  • 1/2 cup Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 tablespoon gelatin
  • 2 tablespoons water
  • Mint leaves for garnish

Instructions

  1. Cook cranberries and sugar in a saucepan over medium heat until cranberries burst and the mixture thickens. Let it cool.
  2. Combine gelatin and water in a small bowl; let it bloom for a few minutes. Heat gently until fully dissolved.
  3. Whip the heavy cream in a mixing bowl until soft peaks form.
  4. Fold in the Greek yogurt, vanilla extract, and cooled cranberry mixture into the whipped cream.
  5. Add the dissolved gelatin to the mixture, stirring gently to combine well.
  6. Spoon the mousse into mini cups and refrigerate for at least 2 hours until set.
  7. Garnish with fresh mint leaves before serving.

Notes

Great for make-ahead gatherings. If using frozen cranberries, no need to thaw. Be careful not to over-whip the cream.
