Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange zest
  • 2 cups all-purpose flour
  • 1 cup dried cranberries, chopped
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
  3. Stir in the vanilla extract and orange zest.
  4. Gradually add in the flour and salt until just combined.
  5. Fold in the chopped cranberries and nuts (if using).
  6. Roll the dough into logs and refrigerate for at least 30 minutes.
  7. Once chilled, slice the logs into 1/4 inch rounds and place on a baking sheet.
  8. Bake for 12-15 minutes or until the edges are lightly golden.
  9. Allow to cool before serving.
