A comforting and hearty meal featuring juicy chicken, creamy mashed potatoes, and sweet glazed carrots.

Ingredients

  • 4 chicken breasts
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 tablespoons fresh herbs (such as thyme, rosemary, or parsley)
  • Salt and pepper to taste
  • 4 large potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons butter
  • 1 pound carrots, peeled and sliced
  • 2 tablespoons brown sugar

Instructions

  1. Season the chicken breasts with salt, pepper, and herbs.
  2. Heat olive oil in a skillet over medium heat and cook the chicken until golden brown and cooked through, about 6-7 minutes per side. Remove the chicken from the skillet.
  3. In the same skillet, add heavy cream and simmer for a few minutes until it thickens. Return the chicken to the skillet and coat with the creamy sauce.
  4. For the mashed potatoes, boil the cubed potatoes in salted water until tender. Drain, then mash with butter and milk until smooth.
  5. For the glazed carrots, cook the sliced carrots in a pot with a little water. Once cooked, drain the water and add brown sugar, stirring until they are coated and caramelized.
  6. Serve the creamy herb chicken with a side of mashed potatoes and glazed carrots.

Notes

Feel free to use any fresh herbs you have. For creamier mashed potatoes, add more butter or cream. Add red pepper flakes to the creamy sauce for a kick.
