A delicious and comforting pasta dish with a creamy red pepper sauce, topped with burrata cheese and fresh herbs. Perfect for weeknights or special dinners.

  • 12 oz pasta (linguine or fettuccine)
  • 2 large red bell peppers
  • 1 cup heavy cream
  • 8 oz burrata cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Fresh herbs (basil or parsley) for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
  3. Add the roasted red bell peppers (pureed or chopped) to the skillet and stir well.
  4. Pour in the heavy cream, mixing everything together. Let it simmer for a few minutes until slightly thickened.
  5. Season with salt and pepper to taste.
  6. Add the cooked pasta to the sauce, tossing until well coated.
  7. Serve topped with torn burrata cheese and fresh herbs.

Notes

Store leftovers in an airtight container in the refrigerator. Keep burrata cheese separate until ready to serve. Reheat pasta with a splash of cream or water to loosen the sauce.
