Instructions

  1. Toast the bread slices until they’re beautifully golden brown.
  2. Combine the ricotta cheese with a pinch of salt and freshly cracked pepper in a mixing bowl.
  3. Heat a little olive oil in a skillet over medium heat, crack in the eggs, and cook to your desired doneness.
  4. Spread the creamy ricotta mixture generously onto the toasted bread.
