A delightful dish featuring tender chicken breasts in a creamy sauce with sundried tomatoes and fresh spinach, perfect for a cozy dinner or impressing guests.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup sundried tomatoes, chopped
  • 1 cup fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Season chicken breasts with salt and pepper, then add to the skillet. Cook for about 6-7 minutes on each side until cooked through. Remove and set aside.
  3. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  4. Add heavy cream, chicken broth, sundried tomatoes, Italian seasoning, and spinach. Stir and bring to a simmer.
  5. Return the chicken to the skillet and let it cook in the sauce for an additional 5 minutes.
  6. Serve with grated Parmesan cheese on top.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For extra flavor, marinate the chicken before cooking.
