A comforting and hearty crockpot white chicken chili that’s perfect for busy weeknights or lazy weekends.

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cans kidney beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced green chilies
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup sour cream
  • 1 cup shredded cheese (optional)
  • Chopped green onions for garnish

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the diced onion and minced garlic.
  3. Add the drained kidney beans, corn, and diced green chilies.
  4. Pour in the chicken broth and add cumin, chili powder, salt, and pepper.
  5. Stir to combine all the ingredients.
  6. Cover and cook on low for 6-8 hours or high for 4 hours.
  7. Shred the chicken in the pot and stir in the sour cream about 30 minutes before serving.
  8. Serve hot, garnished with shredded cheese and green onions.

Notes

For a thicker chili, puree some of the beans or cook uncovered for the last 30 minutes. Adjust spice levels to your preference.
