Delicious chicken thighs marinated in a vibrant citrus and garlic mojo, perfect for grilling or baking.

Ingredients

  • 4 chicken thighs
  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • Fresh cilantro (for garnish)

Instructions

  1. Mix orange juice, lime juice, olive oil, minced garlic, cumin, oregano, salt, and pepper to create the marinade.
  2. Place the chicken thighs in a ziplock bag or a dish and pour the marinade over them.
  3. Seal the bag or cover the dish and refrigerate for at least 120 minutes, preferably overnight.
  4. Preheat the grill or oven to medium-high heat.
  5. Remove chicken from the marinade and discard the marinade.
  6. Grill or bake the chicken thighs for 25-30 minutes, or until cooked through and golden brown.
  7. Garnish with fresh cilantro before serving.

Notes

Marinating overnight enhances the flavor. Can substitute chicken breasts if preferred.
