Delightfully simple cucumber sandwiches perfect for tea parties or casual picnics, filled with creamy herbed spread and crunchy cucumbers.

Ingredients

  • 1 large cucumber
  • 8 slices of bread (white or whole wheat)
  • 4 ounces cream cheese
  • 1 tablespoon fresh dill or parsley (chopped)
  • Salt and pepper to taste
  • Butter (optional, for spreading on the bread)

Instructions

  1. Peel the cucumber and slice it thinly.
  2. In a bowl, mix the cream cheese with freshly chopped dill or parsley. Season with salt and pepper to taste.
  3. Spread the cream cheese mixture generously onto one side of each slice of bread.
  4. Lay cucumber slices on half of the bread slices, then top with the remaining bread slices, cream cheese side down.
  5. Cut each sandwich into quarters or halves and serve immediately.

Notes

To prevent sogginess, salt the cucumber slices and let them drain on paper towels for 10 minutes before assembling. Substitute goat cheese for a tangy kick if desired.
