A luxurious avocado cheesecake made with ripe avocados, cream cheese, and a buttery graham cracker crust, offering a rich yet guilt-free dessert experience.

Ingredients

  • 2 ripe avocados
  • 1 cup cream cheese
  • 1/2 cup honey or maple syrup
  • 1/4 cup lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 cup graham cracker crumbs
  • 1/4 cup melted butter
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, and a pinch of salt. Mix until it resembles wet sand and press into the bottom of a 9-inch springform pan.
  3. Blend ripe avocados, cream cheese, honey (or maple syrup), lemon juice, and vanilla extract until smooth and creamy.
  4. Pour the avocado mixture over the prepared crust and smooth the top.
  5. Bake for 25-30 minutes, until the center is set, then let it cool at room temperature.
  6. Refrigerate for at least 2 hours before serving.
  7. Slice into wedges and enjoy!

Notes

Serve with fresh berries or a dollop of whipped cream. Leftovers can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
