A stunning dessert that combines rich cocoa flavors with blackberry for an indulgent treat, perfect for celebrations.

  • 2 cups all-purpose flour
  • 1 cup cocoa powder
  • 1 1/2 cups sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup blackberry puree
  • 1 cup heavy cream
  • 8 ounces dark chocolate, chopped
  • Blackberries for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Combine flour, cocoa powder, sugar, baking soda, and salt in a large mixing bowl.
  3. Whisk together buttermilk, vegetable oil, eggs, and vanilla until well combined in another bowl.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Fold in the blackberry puree.
  6. Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes, then remove them and transfer to wire racks to cool completely.
  8. Heat the heavy cream in a saucepan until it just starts to simmer.
  9. Remove from heat and pour over the chopped dark chocolate. Let sit for 5 minutes, then stir until smooth.
  10. Once the cakes are completely cool, place one layer on a serving plate and top with chocolate ganache.
  11. Place the second layer on top and pour the remaining ganache over the top and sides.
  12. Decorate with fresh blackberries.
  13. Serve and enjoy!

Notes

Ensure eggs and buttermilk are at room temperature for easier mixing. Do not overmix the batter for a light and fluffy cake.
