These delightful muffins combine the joy of classic muffins with the playful fun of monkey bread, featuring juicy blueberries and a sprinkle of cinnamon sugar.

  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven and prepare the muffin tin by greasing it lightly.
  2. Mix the dry ingredients: flour, sugar, baking powder, and salt together.
  3. Whisk the wet ingredients: milk, melted butter, egg, and vanilla until smooth.
  4. Combine the wet and dry ingredients gently, folding in the blueberries.
  5. Create the cinnamon sugar mixture by mixing brown sugar and cinnamon in a separate bowl.
  6. Layer the muffin cups with batter and sprinkle the cinnamon sugar in between layers.
  7. Bake in the preheated oven for 18-20 minutes or until a toothpick comes out clean.
  8. Let cool slightly before serving warm from the tin.
