A quick and comforting dish made with chicken breasts in a flavorful gravy, perfect for busy weeknights.

Ingredients

  • 4 chicken breasts
  • 1 cup chicken broth
  • 1 can cream of chicken soup
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon flour (optional, for thickening)

Instructions

  1. Heat olive oil in a pan over medium heat. Season chicken breasts with salt and pepper and cook until browned on both sides.
  2. Remove chicken from the pan and set aside.
  3. In the same pan, sauté onions and garlic until translucent.
  4. Add the cream of chicken soup and chicken broth, stirring to combine.
  5. Return the chicken to the pan, cover, and let simmer for about 20-30 minutes until the chicken is cooked through.
  6. If thicker gravy is desired, mix flour with a little water to make a slurry and stir into the gravy.
  7. Serve hot with rice or mashed potatoes.

Notes

For a creamier gravy, you may use half-and-half or milk instead of water when making the slurry. Add herbs like thyme or rosemary for extra flavor.
