A comforting one-pot meal featuring chicken sausage and orzo, perfect for a cozy weeknight dinner.

Ingredients

  • 1 pound chicken sausage
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat.
  2. Add the chopped onion and diced bell pepper, and sauté until softened.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Slice the chicken sausage and add it to the pot. Cook until browned.
  5. Stir in the orzo and Italian seasoning.
  6. Pour in the chicken broth and bring to a boil.
  7. Reduce heat, cover, and simmer for about 10 minutes, or until the orzo is cooked and the liquid is absorbed.
  8. Stir in the spinach and cook until wilted.
  9. Season with salt and pepper to taste.
  10. Serve warm and enjoy the comforting flavors!

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. This dish also freezes well for up to three months.
