A quick and creamy pasta dish with seasoned chicken and vibrant vegetables, perfect for busy weeknights.

  • 8 ounces penne pasta
  • 2 tablespoons olive oil
  • 1 pound chicken breast, diced
  • 2 teaspoons Cajun seasoning
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 bell pepper, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the penne pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken and Cajun seasoning. Cook until browned and fully cooked, about 6-8 minutes.
  3. Add bell pepper, onion, and minced garlic to the skillet. Sauté until vegetables are tender, about 3-4 minutes.
  4. Reduce heat to low and stir in heavy cream and grated Parmesan cheese, cooking until sauce is creamy.
  5. Add cooked penne pasta and toss to combine. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh parsley.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently and add a splash of cream if sauce thickens.
