A comforting one-dish casserole made with ground beef, diced potatoes, mixed vegetables, and topped with melted cheese.

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cups frozen mixed vegetables
  • 4 cups potatoes, diced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef and onion over medium heat until the meat is cooked through. Drain the excess fat.
  3. Stir in the frozen mixed vegetables and cook for another 5 minutes.
  4. In a large baking dish, layer the diced potatoes evenly across the bottom.
  5. Pour the beef and vegetable mixture over the potatoes. Spread the cream of mushroom soup evenly over everything, and season with salt and pepper to taste.
  6. Cover the dish with aluminum foil and bake for 1 hour.
  7. Remove the foil, sprinkle cheese on top, and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
  8. Let the casserole cool slightly before serving.

Notes

Leftover casserole can be stored in the refrigerator for up to 3 days, or frozen for up to 3 months. For a vegetarian version, substitute ground beef with lentils or plant-based meat.
