Delicious and buttery lemon shortbread cookies that are easy to make and perfect for sharing or enjoying alone.

  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and powdered sugar until smooth.
  3. Add in the lemon zest, lemon juice, and vanilla extract, mixing well.
  4. Gradually add the flour and salt, mixing until the dough comes together.
  5. Roll the dough into a log, wrap it in plastic wrap, and chill in the refrigerator for 30 minutes.
  6. Slice the chilled dough into rounds and place on a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes until edges are lightly golden.
  8. Let cool on a wire rack before serving.
