A traditional Indian dessert made with soft ricotta discs soaked in creamy milk, flavored with cardamom and rose water.

Ingredients

  • 1 cup ricotta cheese
  • 1 cup milk
  • 1 cup sugar
  • 1/2 teaspoon cardamom powder
  • 1 tablespoon rose water
  • Chopped nuts (pistachios, almonds) for garnish
  • 1/4 cup water
  • 1/2 teaspoon saffron strands (optional)

Instructions

  1. In a pan, boil the milk over medium heat and stir gently until it reduces slightly.
  2. Once the milk is simmering, add the sugar and stir until it completely dissolves.
  3. Mix in the cardamom powder and rose water, then set aside to cool.
  4. Form the ricotta cheese into small discs.
  5. In a separate pot, bring 1/4 cup of water to a gentle boil and add the ricotta discs.
  6. Once they float to the surface, carefully drain them.
  7. Place them in the milk mixture to soak for a few hours in the refrigerator.
  8. Garnish with chopped pistachios and almonds before serving.

Notes

Rasmalai is best enjoyed fresh, but can be stored in the refrigerator for up to 3 days. Keep the discs submerged in the milk mixture.
