A hearty and delicious dish featuring bell peppers stuffed with ground beef, rice, and spices, perfect for the whole family.

  • 4 large bell peppers
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 can (14.5 oz) diced tomatoes
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the onion and garlic until softened.
  4. Add the ground beef and cook until browned.
  5. Stir in the cooked rice, diced tomatoes, chili powder, cumin, salt, and pepper.
  6. Stuff each pepper with the beef mixture.
  7. Place the stuffed peppers in a baking dish and cover with foil.
  8. Bake for 30 minutes; then remove the foil, add cheese if desired, and bake for another 10 minutes until the cheese is melted and bubbly.
  9. Serve warm.

Notes

You can substitute ground beef with turkey, chicken, or a plant-based protein. Add vegetables like corn or black beans for extra nutrition.
