Delicious and colorful stuffed bell peppers filled with a savory mix of meat, rice, and cheese, perfect for family dinners.

Ingredients

  • 4 bell peppers
  • 1 cup cooked rice
  • 1 pound ground beef or turkey
  • 1 cup diced tomatoes
  • 1 small onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 cup shredded cheese
  • Salt and pepper to taste
  • Olive oil (for cooking)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, heat a drizzle of olive oil over medium heat and sauté the chopped onion until translucent.
  4. Add the ground beef or turkey to the skillet and cook until browned.
  5. Stir in the cooked rice, diced tomatoes, garlic powder, Italian seasoning, salt, and pepper.
  6. Fill each of the bell peppers with the savory meat mixture, packing it in nicely.
  7. Top each filled bell pepper with shredded cheese.
  8. Cover the baking dish with foil and bake for 25 minutes.
  9. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden brown.
  10. Let the peppers cool slightly before serving.

Notes

For a vegetarian version, replace the meat with black beans or quinoa. Leftovers can be stored in an airtight container for up to 3 days.
