Delicious baked breakfast tacos filled with eggs, sausage, and cheese, perfect for brunch or family gatherings.

Ingredients

  • 8 taco-sized tortillas
  • 1 cup cooked and crumbled breakfast sausage
  • 1 cup scrambled eggs
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • Sour cream and salsa for serving

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the cooked sausage, scrambled eggs, diced tomatoes, and half of the cheese.
  3. Place the tortillas in a baking dish and fill each tortilla with the sausage and egg mixture.
  4. Sprinkle the remaining cheese on top of the filled tortillas.
  5. Bake in the preheated oven for 15-20 minutes, until the cheese is bubbly and golden.
  6. Garnish with chopped green onions and serve with sour cream and salsa on the side.

Notes

For a vegetarian twist, swap the sausage with black beans or sautéed veggies. Leftovers can be stored for up to 3 days.
