Light and fluffy pancakes made with Greek yogurt that transform your mornings into a culinary celebration.

Ingredients

  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup Greek yogurt
  • 1/2 cup milk
  • 2 large eggs
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking

Instructions

  1. In a bowl, mix together the flour, baking powder, and salt.
  2. In another bowl, whisk together the Greek yogurt, milk, eggs, sugar, and vanilla extract until smooth.
  3. Gently combine the wet and dry ingredients, stirring just until mixed.
  4. Heat a non-stick skillet over medium heat and add a little butter or oil.
  5. Pour about 1/4 cup of the batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Serve warm with your favorite toppings.

Notes

Perfect fluffiness is achieved by not overmixing the batter. Adjust the skillet temperature to avoid burning.
