French Onion Chicken Orzo Casserole

A comforting casserole blending French onion soup flavors with tender chicken and orzo for a delicious family meal.

  • 2 cups cooked orzo pasta
  • 1 lb chicken breast, cooked and shredded
  • 1 large onion, thinly sliced
  • 2 cups beef broth
  • 1 cup shredded mozzarella cheese
  • 1 cup sour cream
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté the onions in olive oil over medium heat until caramelized, about 15-20 minutes.
  3. Combine the cooked orzo, shredded chicken, caramelized onions, beef broth, garlic powder, salt, and pepper in a large bowl.
  4. Add the sour cream and half of the mozzarella cheese, stirring until well combined.
  5. Transfer the mixture into a greased casserole dish.
  6. Top with the remaining mozzarella cheese.
  7. Bake for 25-30 minutes until the cheese is bubbly and golden brown.
  8. Garnish with fresh parsley before serving.

Notes

You can prepare this dish a day in advance and bake just before serving. For variation, swap out the beef broth for chicken broth or add sautéed mushrooms or spinach.
