A delightful twist on classic Tiramisu featuring layers of fresh raspberries for a bright and creamy dessert experience.

Ingredients

  • 1 cup fresh raspberries
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1 cup brewed coffee, cooled
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 24 ladyfinger cookies
  • Cocoa powder for dusting
  • Chocolate shavings for garnish (optional)

Instructions

  1. Whisk the mascarpone cheese, sugar, and vanilla extract in a mixing bowl until smooth.
  2. Whip the heavy cream in another bowl until soft peaks form, then gently fold it into the mascarpone mixture.
  3. Dip each ladyfinger into the cooled coffee for a few seconds until soaked but not soggy.
  4. Layer half of the soaked ladyfingers in the bottom of a dish.
  5. Spread half of the mascarpone mixture over the ladyfingers.
  6. Add half of the fresh raspberries on top.
  7. Repeat the layers with the remaining ingredients, finishing with the mascarpone mixture.
  8. Chill the tiramisu by covering and refrigerating for at least 4 hours or overnight.
  9. Dust with cocoa powder and garnish with chocolate shavings and additional raspberries before serving.

Notes

For a richer coffee flavor, use espresso instead of regular brewed coffee. Experiment with other fruits for different flavor profiles.
