Delicious Funfetti Cookie Sandwiches filled with creamy vanilla frosting, perfect for any celebration.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup rainbow sprinkles
  • 1 cup vanilla frosting

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare baking sheets with parchment paper.
  2. Cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Whisk together the flour, baking soda, and salt in a separate bowl and gradually add to the wet mixture.
  5. Gently fold in the rainbow sprinkles.
  6. Drop rounded tablespoons of dough onto the prepared sheets, spacing them two inches apart.
  7. Bake for 10-12 minutes or until the edges are lightly browned.
  8. Allow cookies to cool completely on wire racks.
  9. Spread vanilla frosting on the bottom of one cookie and top with another to make a sandwich.
