  • 4 Chicken breasts
  • 3 cloves Garlic, minced
  • Fresh herbs (such as thyme and rosemary)
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • Salt, to taste
  • Pepper, to taste
  • 4 Potatoes, peeled
  • 1/2 cup Heavy cream
  • 1 cup Chicken broth

Instructions

  1. Season the chicken breasts with salt, pepper, and minced garlic.
  2. Heat olive oil in a skillet over medium heat. Add the seasoned chicken breasts and cook until golden brown, about 6-7 minutes per side.
  3. Remove the chicken and add butter and chopped herbs to the skillet, stirring to create a pan sauce.
  4. Boil peeled potatoes in salted water until tender. Drain and mash with heavy cream and salt.
  5. Place creamy mashed potatoes on each plate, then lay the chicken on top.
  6. Drizzle the pan sauce over the chicken and serve warm.

Notes

For an even creamier texture, consider adding butter or cream cheese to the mashed potatoes.
