A delightful dish bringing together succulent garlic herb chicken and velvety mashed potatoes, perfect for a cozy family dinner.

Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup heavy cream
  • 4 tablespoons butter
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix the olive oil, minced garlic, dried oregano, thyme, salt, and pepper in a large bowl. Add the chicken breasts and coat them well.
  3. Place the chicken in a baking dish and bake for 25-30 minutes until cooked through.
  4. Boil the potatoes in salted water until tender. Drain and return them to the pot.
  5. Add heavy cream, butter, and Parmesan cheese to the potatoes and mash until smooth. Season with salt and pepper.
  6. Serve the garlic herb chicken alongside the creamy mashed potatoes, garnished with fresh parsley.

Notes

For lighter mashed potatoes, substitute half of the heavy cream with chicken broth. Adjust the garlic according to preference for flavor strength.
