Light and fluffy beignet squares drizzled with a sweet glaze, perfect for brunch or a midnight snack.

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons sugar
  • 3/4 cup buttermilk
  • 1 large egg
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • Oil for frying
  • 1 cup powdered sugar
  • 2 tablespoons milk (for glaze)

Instructions

  1. In a mixing bowl, combine the flour, baking powder, baking soda, salt, and sugar.
  2. Whisk together the buttermilk, egg, melted butter, and vanilla extract.
  3. Fold in the wet ingredients into the dry mixture.
  4. Transfer the dough to a floured surface and roll it out to about 1/2 inch thick.
  5. Slice the rolled dough into squares.
  6. Heat the oil over medium heat until it reaches about 350°F (175°C).
  7. Add a few squares to the hot oil and fry until golden brown on both sides, about 1-2 minutes each side.
  8. Remove the beignet squares and place them on a plate lined with paper towels.
  9. Whisk together the powdered sugar and milk until smooth for the glaze.
  10. Drizzle the glaze over the warm beignets.

Notes

Best enjoyed fresh, but leftovers can be stored in an airtight container for up to two days at room temperature.
