Ingredients
Scale
4 chicken breasts
2 tablespoons olive oil
4 cloves garlic, minced
1 tablespoon fresh herbs (such as rosemary and thyme)
Salt and pepper to taste
1 cup chicken broth
2 tablespoons butter
4 large potatoes, peeled and cubed
1/2 cup cream
Salt to taste
Instructions
Preheat your oven to 375°F (190°C).
Season the chicken breasts with salt and pepper, then rub with minced garlic and fresh herbs.
Sear the chicken in olive oil over medium-high heat for about 5 minutes on each side.
Transfer the chicken to the oven and bake for 20-25 minutes until fully cooked (internal temperature should reach 165°F or 75°C).
Add the chicken broth to the skillet, scraping up the browned bits.
Stir in the butter and simmer until the sauce thickens slightly.
Boil the cubed potatoes in salted water until fork-tender, about 15 minutes.
Mash the drained potatoes with cream and salt to taste.
Serve by placing mashed potatoes on each plate, topping with glazed chicken, and drizzling with pan sauce.
Notes
For extra flavor, add a splash of balsamic vinegar to the pan sauce.
