A delightful side dish with bright and zesty flavors, perfect for complementing grilled proteins or as a refreshing salad base.

Ingredients

  • 1 cup long-grain rice
  • 2 cups water or chicken broth
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • Salt to taste
  • Fresh parsley for garnish

Instructions

  1. In a saucepan, heat olive oil over medium heat until shimmering.
  2. Add the rice and toast it for about 2-3 minutes, stirring occasionally.
  3. Pour in the water or chicken broth, then add salt, lemon juice, and lemon zest.
  4. Bring the mixture to a vigorous boil, then reduce heat, cover, and simmer for 18-20 minutes until the rice absorbs the liquid.
  5. Fluff the rice with a fork and garnish with fresh parsley. Serve immediately.

Notes

For extra flavor, consider toasting the rice longer or adding a bay leaf. Vegetable broth can be used for a lighter version.
