A quick and healthy dish featuring ground turkey and fresh zucchini, perfect for busy weeknights.

Ingredients

  • 1 lb ground turkey
  • 2 medium zucchinis, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can diced tomatoes (14.5 oz)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add onion and garlic, sauté until fragrant.
  3. Add ground turkey, cooking until browned.
  4. Stir in zucchini and bell pepper, cook until tender.
  5. Add diced tomatoes and Italian seasoning, simmer for 10 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot.
