A hearty and comforting bowl of ham and bean soup, perfect for chilly days and family gatherings.

Ingredients

  • 1 lb dried white beans (such as navy or great northern)
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 lb ham, diced
  • 8 cups chicken broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Rinse and soak the dried beans overnight in enough water to cover them. Drain before using.
  2. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, sautéing until softened, about 5-7 minutes.
  3. Stir in the minced garlic and diced ham, cooking for another 2 minutes.
  4. Add the soaked beans, chicken broth, bay leaf, and thyme to the pot. Bring to a boil.
  5. Reduce the heat and let it simmer for about 90-120 minutes, or until the beans are tender.
  6. Remove the bay leaf, season with salt and pepper, and garnish with chopped parsley before serving.

Notes

This soup can be stored in an airtight container in the fridge for up to 4 days or frozen for up to 3 months.
