A quick and nutritious stir-fry loaded with vibrant vegetables and tender chicken, perfect for busy weeknights.

Ingredients

  • 1 lb chicken breast, sliced
  • 2 cups mixed vegetables (broccoli, bell peppers, carrots)
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Cooked brown rice or quinoa for serving

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the minced garlic and ginger to the hot oil, sautéing for about one minute.
  3. Introduce the sliced chicken breast to the skillet. Cook for 5-7 minutes until browned.
  4. Stir in the mixed vegetables and soy sauce, and stir-fry for another 3-5 minutes.
  5. Season with salt and pepper to taste.
  6. Serve over a bed of cooked brown rice or quinoa.

Notes

Feel free to use leftover veggies or try adding chopped peanuts for a crunchy texture.
