A warm and filling vegetable soup packed with nutrients, perfect for any season.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 potato, diced
  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery; sauté until softened, about 5 minutes.
  2. Stir in the garlic and cook for another minute.
  3. Add the potato, zucchini, green beans, vegetable broth, diced tomatoes, oregano, thyme, salt, and pepper.
  4. Bring to a boil, then reduce heat and let it simmer for about 20-30 minutes until the vegetables are tender.
  5. Taste and adjust seasonings if needed. Serve hot, garnished with fresh parsley.

Notes

Feel free to add any other vegetables you have on hand. For a creamier soup, blend a portion after cooking. Adjust spices to taste.
