A creamy and nutrient-packed cheesecake featuring fresh kiwi and spirulina, perfect for any special occasion.

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup Greek yogurt
  • 1/4 cup spirulina powder
  • 3 kiwis, sliced
  • 1/4 cup fresh lime juice
  • 1 tablespoon gelatin (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the graham cracker crumbs and melted butter; press into the bottom of a springform pan.
  3. Mix cream cheese, powdered sugar, vanilla extract, Greek yogurt, and spirulina until smooth.
  4. If using, dissolve gelatin in warm water and mix into the cheesecake filling.
  5. Pour the cheesecake filling over the crust and smooth the top.
  6. Arrange sliced kiwis on top and drizzle with lime juice.
  7. Chill in the refrigerator for at least 4 hours or until set.
  8. Remove from the springform pan, slice, and serve.

Notes

This cheesecake pairs well with whipped cream or fresh fruit salad. Store leftovers in an airtight container for up to 5 days.
