A decadent mousse cake combining luscious dark chocolate and tangy raspberries for an indulgent experience.

Ingredients

  • 1 cup raspberries
  • 200g dark chocolate, chopped
  • 1/2 cup heavy cream
  • 3 large eggs, separated
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup butter

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a cake pan.
  2. Melt the dark chocolate and butter together in a heatproof bowl.
  3. Beat the egg yolks and sugar until pale and fluffy, then stir in the chocolate mixture.
  4. Whip the heavy cream until soft peaks form, then fold into the chocolate mixture.
  5. Whisk the egg whites and salt until stiff peaks form, then gently fold into the chocolate mixture.
  6. Pour half the mousse mixture into the prepared pan, layer with raspberries, and top with remaining mousse.
  7. Refrigerate for at least 4 hours or overnight to set.
  8. Before serving, garnish with extra raspberries and chocolate shavings.

Notes

Use high-quality dark chocolate for the best flavor. For variations, substitute raspberries with strawberries or blueberries.
