Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1/4 cup brown sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 4×8 inch loaf pan.
  2. Mash the ripe bananas with a fork until smooth. Stir in the melted butter.
  3. Mix in the baking soda and a pinch of salt.
  4. Blend in the sugar, beaten egg, and vanilla extract until glossy.
  5. Incorporate the flour until just mixed; avoid over-mixing.
  6. Combine the ground cinnamon with the brown sugar.
  7. Add half of the banana batter to the pan, sprinkle half of the cinnamon-sugar, then layer with remaining batter and cinnamon-sugar. Swirl gently with a knife.
  8. Bake for 60-65 minutes, or until a toothpick comes out clean.
  9. Cool in the pan before transferring to a wire rack.

Notes

For a twist, add chocolate chips or nuts. Store wrapped at room temperature for up to 3 days or freeze for up to 3 months.
