  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup cream cheese, softened
  • 1/2 cup honey
  • 1 cup diced fresh peaches
  • 1/2 cup powdered sugar (for frosting)
  • 1 tablespoon milk (for frosting)
  • Peach slices (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Whisk together the flour, baking powder, baking soda, and salt in a bowl.
  3. Cream the softened butter and sugar until fluffy, then add the eggs and vanilla, mixing well.
  4. Blend in the cream cheese and honey until smooth.
  5. Combine the dry ingredients with the cream cheese mixture until just mixed. Gently fold in the diced peaches.
  6. Fill the cupcake liners with batter and bake for 18-20 minutes, or until a toothpick comes out clean.
  7. Frost with the powdered sugar mixed with milk and garnish with peach slices.
