  • 2 large potatoes, diced
  • 1 tablespoon olive oil
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 4 eggs

  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add diced potatoes and cook until golden brown and tender, about 10-15 minutes. Stir occasionally to ensure even cooking.
  2. While the potatoes are cooking, remove the sausage from its casings and crumble it into the skillet. Cook until browned.
  3. Add the diced bell pepper and chopped onion to the skillet. Sauté until softened and aromatic.
  4. In a separate pan, fry or scramble the eggs to your liking.
  5. Season the mixture in the skillet with salt and pepper, and stir to combine all flavors.
  6. To serve, divide the sausage and potato mixture into bowls, top with the cooked eggs, and garnish with fresh parsley.
