A delightful stuffed chicken recipe with a rich filling of creamy cheese, spinach, and sun-dried tomatoes, perfect for family gatherings.

  • 4 chicken breasts
  • 1 cup spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the cream cheese, mozzarella, spinach, sun-dried tomatoes, garlic, Italian seasoning, salt, and pepper in a bowl.
  3. Cut a deep pocket into each chicken breast.
  4. Stuff each chicken breast with the creamy filling.
  5. Sear the stuffed chicken breasts in olive oil over medium heat for about 3-4 minutes on each side.
  6. Bake in the oven for 25-30 minutes until the internal temperature reaches 165°F (73°C).
  7. Rest the chicken for a few minutes before slicing.

Notes

Don’t overstuff the chicken, and choose evenly-sized breasts for even cooking. Experiment with different cheese types for variety.
