A flavorful stuffed chicken dish filled with creamy cheese and spinach, perfect for family dinners or special occasions.

  • 4 boneless, skinless chicken breasts
  • 1 cup spinach, chopped
  • 1 cup cream cheese, softened
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Create the stuffing mixture by mixing together the chopped spinach, cream cheese, mozzarella cheese, Parmesan cheese, garlic, Italian seasoning, salt, and pepper in a bowl.
  3. Prepare each chicken breast by cutting a pocket into it.
  4. Stuff the chicken pockets with the cheese mixture.
  5. Sear the stuffed chicken breasts in a hot skillet with olive oil until golden brown on both sides.
  6. Bake the chicken in a baking dish for 25-30 minutes until cooked through.
  7. Rest the chicken for a few minutes before serving.

Notes

Serve over quinoa or garlic mashed potatoes. Store leftovers in an airtight container for up to 3 days.
