A delightful blend of classic potato salad and spicy jalapeño poppers, perfect for summer gatherings.

Ingredients

  • 2 pounds potatoes, diced
  • 4 jalapeños, diced
  • 4 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 green onions, sliced
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced potatoes in olive oil, salt, and pepper. Spread them out on a baking sheet and roast in the oven for 25-30 minutes until golden brown and tender.
  3. In a mixing bowl, combine the roasted potatoes, diced jalapeños, crumbled bacon, cheddar cheese, sour cream, mayonnaise, and green onions.

Notes

For a milder flavor, remove the seeds and membranes from jalapeños. This salad is perfect for make-ahead meals; let the flavors meld overnight in the fridge.
