  • 4 boneless, skinless chicken breasts
  • 1 cup shredded cheese (cheddar or cream cheese)
  • 23 jalapeños, diced and seeds removed
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Bacon strips (optional)
  • Olive oil or cooking spray

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine shredded cheese, diced jalapeños, garlic powder, onion powder, salt, and pepper; mix until well blended.
  3. Cut a pocket into each chicken breast, ensuring not to cut all the way through.
  4. Stuff each chicken breast with the jalapeño-cheese mixture and wrap with bacon strips if desired.
  5. Place the stuffed chicken on a greased baking sheet and drizzle with olive oil.
  6. Bake for 25-30 minutes or until cooked through and internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for a few minutes before serving.
