  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup cream cheese, softened
  • 1/4 cup butter, softened
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 cup blueberries
  • 1/4 cup milk

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with liners.
  2. Mix the dry ingredients: whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Cream the butter and cream cheese in another bowl until creamy.
  4. Combine the egg and vanilla extract, mixing until well combined.
  5. Alternate adding the dry ingredients to the wet mixture, alternating with the milk, until just combined.
  6. Fold in the blueberries gently.
  7. Divide the batter among the muffin cups equally, filling each about three-quarters full.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let them cool in the tin for a few minutes before transferring to a wire rack.

Notes

Serve with whipped cream or powdered sugar. Store in an airtight container for 1-2 days at room temperature.
