  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup buttermilk
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (for glaze)
  • 1 cup powdered sugar
  • 1/4 cup bourbon (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes until a toothpick inserted in the center comes out clean.
  9. Melt the butter in a saucepan, stir in optional bourbon and powdered sugar to create the glaze.
  10. Once the cake is done, let it cool for 10 minutes, poke holes in the top, and drizzle the glaze over while the cake is still warm.
  11. Allow the cake to cool completely before serving.

Notes

Serve with fresh berries, whipped cream, or ice cream for an elevated experience. Store leftovers tightly covered at room temperature for up to 3 days or refrigerate for about a week.
