Instructions

  1. Combine the base ingredients: In a saucepan over medium heat, combine 2 cups of sugar, 1 cup of heavy cream, and 1/2 cup of light corn syrup. Stir until the sugar is completely dissolved.
  2. Boil the mixture: Bring the mixture to a boil, letting it bubble away without stirring until it reaches the soft ball stage—about 240°F (115°C).
  3. Add flavor and richness: Remove from heat and add 1/4 cup of unsalted butter and 1 teaspoon of vanilla extract.
  4. Cool your candy mixture: Let the mixture cool slightly before pouring it onto a greased surface.
  5. Pull the candy: When it’s cool enough to handle, start pulling the candy until it turns light in color and shiny.
  6. Shape and cut: Shape into ropes and cut into bite-sized pieces, dusting with powdered sugar.
  7. Cool completely: Allow the candy to cool completely before serving.
