  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Powdered sugar for rolling

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg, lime juice, and lime zest until well combined.
  4. In another bowl, whisk together flour, baking powder, and salt. Gradually add to the wet mixture until just combined.
  5. Chill the dough in the refrigerator for 30 minutes.
  6. Roll the dough into small balls and coat in powdered sugar.
  7. Place on a lined baking sheet and bake for 10-12 minutes until lightly golden.
  8. Allow to cool slightly before transferring to a wire rack.

Notes

For extra lime flavor, use both the zest and juice from key limes, if available. Make sure your butter is softened for the best texture.
