Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 large egg yolks
  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup fresh key lime juice
  • 1 teaspoon lime zest
  • Whipped cream for serving

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture into the bottom and sides of a 9-inch pie pan.
  3. In another bowl, whisk egg yolks, sweetened condensed milk, lime juice, and lime zest until smooth.
  4. Pour the lime filling into the prepared crust and bake for 15 minutes until set but slightly jiggly in the center.
  5. Remove from oven and cool to room temperature. Refrigerate for at least 3 hours to set completely.
  6. Slice and serve with a generous dollop of whipped cream.

Notes

For best flavor, use fresh key limes. Adjust sugar for sweetness preference.
