A delightful and easy Lemon Blueberry Bread that combines zesty lemon and sweet blueberries for a comforting treat.

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • Zest of 1 lemon
  • 1 cup fresh blueberries
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Whisk together flour, baking powder, baking soda, and salt in a bowl until evenly combined.
  3. Cream the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, lemon zest, and lemon juice.
  5. Combine the flour mixture and buttermilk into the batter, starting and ending with the flour mixture.
  6. Fold in the fresh blueberries gently.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For best results, use room temperature ingredients and fresh blueberries. Consider adding lemon extract for more citrus flavor.
